Pepper dem gang sauce

This dish is very easy and time friendly for when you have unexpected guest. We named this sauce pepper dem gang sauce because it'll shake the table, literally this dish will have your guests falling in love.




Listed below are the ingredients you will need for this "leave your guests speechless dish. Leave a comment to let us know how did. INGREDIENTS 2 Scotch bonnets (Ata Rodo to my people) 2 green bell peppers 1 red bell pepper Vegetable oil ( or which ever oil you prefer. NOTE: palm oil is not required) 1 large Onion 1 clove of Garlic Assorted meat 1 tin black eyed beans (save time doing the picking and sorting of beans) Rice Mixed herbs All purpose seasoning 3 cubes of Maggi 1 cube of Knorr seasoning (chicken or fish seasoning can also be used. Foil (very important when making ring rice as it helps steam and soften faster) STEP ONE: WASH/COOK YOUR MEAT

  1. Wash and clean all your meats before boiling. You could also boil the meat which will get the dirt out. Once you've done this ensure you rinse the meat and wash the pot so you can return it to a boil.

  2. Now your meat is clean and ready. Let's season, Add 2 cubes of Maggi seasoning alongside the mixed herbs 2tbl spoons, Knorr cube and your 1tbl spoon of all purpose seasoning. Essentially, just season to taste. Occasionally stir and watch you meat until it softens, once your meat is soft place in your grill (or you could fry it, its completely up to you. I personally prefer grilling as it is a healthier option). Leave meat in the oven for 10 minutes on a 160° heat. Whilst your meat is grilling or resting you can start your sauce and rice

"MAKE SURE YOUR COOKING AREA IS CLEAN. TOO MUCH MESS AND YOU'LL GET FRUSTRATED. CLEAN HANDS AND INGREDIENTS ARE A MUST."


STEP TWO: RICE & BEANS

  1. Rinse the tin of beans into a sieve and wash properly before placing the beans into your desired pot. Once you have done so add 2 cups of water to the pot with the beans. Secondly, add 1 Maggi cube along with one tablespoon of mixed herbs and 1 tablespoon of all purpose seasoning to your pot of beans. This is all to make sure the rice and beans is well seasoned. Loosely place a lid on the pot to avoid over boiling.

  2. Thoroughly wash your rice. I would normally serve one rice cup per guests, unless they're really greedy lol. Whilst the beans are boiling on high heat might I add make sure to continuously stir the beans, when half of the water in the pot dissolves you can then lower the heat to a so it simmers and continues to soften.

  3. Once the beans feel soft enough to start to break add the rice to the beans with 2 cups of water. Then turn the heat to high. Once, it begins to boil a lot stir it all together and place foil (wide enough to cover the whole pot) over the pot. Reduce the heat to a medium, placing the pot lid over the foil and the pot to aid steaming process. After about 10mins you should have the perfect rice and beans. P.S make sure the water from the rice has evaporated completely if needed reduce or increase the heat (just not too much to burn it all away) to get rid of excess water. So let's begin our sauce,

PEPPER DEM GANG SAUCE

  1. Start by rinsing and slicing the scotch bonnets in half and placing in the blender or pound using a mortar which is my preferred method as it adds more flavour, but is a lot of hand work.

  2. Then you chop the bell peppers green and red into the blender with a clove of garlic and onion

  3. NOTE: There is no salt or tomato plums added, because it is kidney failure friendly. Don't be afraid to try new things because you have eating restrictions does not mean you can not enjoy good food.

  4. After you have placed everything into the blender add one cup of water, cover the blender and pulse it which means not fully blending the ingredients but to finely chop it keeping the flavour.

  5. After this is done pour your blended sauce into a clean pot and place on the hob on full heat. Add the stock from the meat that was boiled leave sauce to simmer down whilst stirring occasionally.

  6. Allow all the excess water to dissolve into the pan (I recommend first placing sauce on a high heat then slowly reducing the heat as it dissolves). Once this is done and all the water has dissolved add 5tbl spoons of oil keep stirring as you add. It should now start to fry add the remaining stock from the meat, stir the sauce.

  7. Place heat on medium low heat.
